Summer is such a fun time of year. The kids are out of school, and we can all spend time together in the sun! I wanted to share some of my favorite easy summer treats to make with my boys. Do you have any favorite summer recipes? Leave a comment, I’d love to hear from you!

Fruit Pizza

Crust:
1 1/3 cups all-purpose flour
½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
¾ cup granulated sugar
½ cup unsalted butter, softened but still cool
1 large egg
1 tsp vanilla extract
Frosting and Toppings:
1 8oz package cream cheese, softened
¼ granulated sugar
½ tsp vanilla extract
4 cups assorted fresh fruit (such as kiwi slices, strawberry slices, raspberries, blue berries, diced pineapple, mandarin oranges)
1 tbsp water

  1. Preheat oven to 350 degrees
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt
  3. Cream together sugar and butter with an electric stand mixer
  4. Mix in egg and vanilla then slowly blend in dry ingredients
  5. In a greased 12-inch pizza pan, Line a greased 12-inch pizza pan with greased parchment paper
  6. Spray hands with non-stick cooking spray and evenly spread cookie dough into prepared pizza pan
  7. Bake 12-14 minutes, until edges are golden
  8. Using an electric stand mixer, whip cream cheese with sugar and vanilla until light and fluffy
  9. Spread evenly over cooled crust
  10. Top with fruit!

 

Frozen Chocolate Bananas

Ingredients:
4 Ripe bananas, cut in half
¾ cup milk or semisweet chocolate chips
Popsicle sticks
Toppings (such as sprinkles, nuts, coconut flakes)

  1. Cut bananas in half, and stick popsicle sticks into the bottoms
  2. Place bananas in the freezer for one hour
  3. Dip frozen bananas into melted chocolate
  4. Sprinkle with toppings
  5. Place dipped bananas onto wax paper and let freeze for another hour

Mac and Cheese Bites

Ingredients:
½ pound elbow macaroni

2 tbs butter
2 tbs flour
1 ½ cups milk
2 cups shredded sharp cheddar cheese
2 ounces cream cheese
½ tsp salt
¼ tsp pepper
1 egg, beaten

1. Preheat oven to 400 degrees
2. Spray mini muffin tins with cooking spray
3. Cook pasta according to packaged directions and set aside
4. In a medium size pan, combine butter and flour over medium heat. Whisk until butter is melted and mixture is smooth
5. Slowly add milk and bring to a simmer
6. Add 1 ½ cups of the cheese, cream cheese, and salt and pepper. Stir until smooth and creamy. Remove from hear.
7. In a large mixing bowl, carefully stir pasta, cheese sauce, and egg until evenly mixed and pasta is evenly coated.
8. Spoon mac and cheese into mini muffin tins and top each with a pinch of remaining cheese
9. Bake at for 15 minutes or until golden brown
